  • 3/4 c butter
  • 1/2 c confectioner's sugar
  • 1 T grated lemon zest
  • 2 t dried thyme leaves
  • 1 1/2 c all-purpose flour
  • 1/4 t salt

Step 1

In a medium bowl, beat butter and sugar at medium-high speed with a mixer until creamy. Add lemon zest and thyme, beating until combined. In a small bowl, combine flour and salt. Gradually add to butter mixture, beating until combined. Shape mixture into 2 (10 in) logs; wrap in plastic wrap and chill for 1 hour.

Preheat oven to 350. Line baking sheets w/parchment paper. Unwrap dough and cut into 1/3 in thick slices. Place on prepared baking sheets, about 1 in apart. Bake for 11 min or until edges are lightly browned. Let cool on pans for 2 min. Remove from pans and cool completely on wire racks.
