Grilled Chicken, Ham and Swiss Wraps

Ingredients
- 3 boneless, Skinless chicken breast (5-6 0z. Each)
- 1 tbsp canola oil
- 21/2 tbsp dijon mustrad rub, divided
- 2 medium whole dill pickles
- 4 oz swiss cheese
- 1/2 cup light mayo
- 1 garlic clove, pressed
- 12 thin slices low sodium deli ham
- 3 11-inch flour tortillas

Step 1
Brush chicken with oil, spring 2 tbsp of rubb. Arrange chicken in small baker, cover with parchment paper. Microwave on high 5-6 min or until internal temp reaches 165 degrees F. REmove chicken from baker to clean cutting board, cool 5 mins. Dice chicken into 1/2 inch pieces.
Meanwhile, slice pickles lengthwise with serrated peeler. Grate cheese. Combine mayo, garlic, and remaining 1/2 tbsp rub in bowl, mix will. Add chick to bowl and stir well to coat.
To assemble wraps, layer 2 slices of ham widthwise over center of one tortilla overlapping as necessary; top with 1/3 chicken mixture, 1/3 pickles, two additional slices of ham and 1/3 cheese. FOld in sides of tortilla and roll up tightly7 burrito style. Repeat 2 times for total of 3 wraps.
Preheat grill pan and grill presss over medium heat for 5 mins. Place wraps in pan top with grill press and cook 3-4 mins per side or until grill marks appear. Remove wraps from pan; cut in half on a bias and serve immediately.
