Peeling Citrus Fruit
By Hklbrries
Q: I love oranges and grapefruit in the winter. Is there an easy way to remove the peel?
A: It takes a little practice, but this technique works well with any citrus fruit, from limes to pomelos.
1. Slice off the stem end of the fruit (including about a quarter of an inch of the flesh) using a small, very sharp knife. Repeat with the other end. Place the fruit flat on a work surface for steady trimming.
2. Following the contour of the fruit, slice away the peel and pith from top to bottom, taking off as little flesh as possible, until no bit of white remains. If you want rounds, turn the fruit on its side and slice.
3. For segments, hold the fruit over a bowl. First cut alongside one membrane, then along the opposite membrane to form a V; release the segment. Repeat to remove all segments.
