Preparation

Step 1

Pre heat oven to 325. Wrap ham completely with parchment lined foil; place on a rimmed baking sheet or in a roasting pan. Bake ham at 325 for 1 1/2 hours.

Unwrap ham; discard parchment and foil. Trim fat to 1/4 inch thick, using a large sharp knife. Score fat in a diamond pattern, making lines about 3/4 inch apart. Transfer ham to a large roasting pan.

Stir together brown sugar and cognac until smooth. Spoon 3/4 of the brown sugar mixture evenly over ham. Bake ham at 325 for 1 hour. Remove ham from oven.

Baste ham lightly with brown sugar mixture; return ham to oven. Bake ham for 1 1/2 hours at 325, brushing with remaining brown sugar mixture every 10mins. Transfer ham to a platter, garnish as desired.
