Ingredients
- 1 pkg Boca burger, crumbled
- (1 T oil)
- 15 oz can black beans
- 15 oz can dark red kidney beans
- 15 oz can chili beans
- 28 oz can crushed tomatoes
- 15 oz can corn, drained
- 1 pkg chili seasoning
- 1 box of cornbread mix
- 1 egg
- (¼ c oil)
- 1 chopped jalapeño, optional

Preparation
Step 1
In a sauce pan w/ 2-3" of water add squash, cover, &
heat. (Steam until tender if using fresh squash.) Drain
excess water & add sugar, milk, butter, vanilla, orange
extract, salt, flour and eggs. Mix well. Place squash
mixture into sprayed 8” square casserole dish. In
another bowl combine topping ingredients. Sprinkle
over squash. Bake for 15 min or until topping is golden
brown.
Steam veggies in 3-4” water to desired tenderness.
Drain. Add butter, soy sauce & pepper to desired taste.
Toss well.
Prepare desired amt of rice according to pkg
directions.
