Ingredients

  • 1 5 lb. pork loin, center cut
  • 1 cut clove garlic
  • 1 tsp. salt
  • 6 medium large, thinly sliced potatoes
  • 2 tbsp. sipped parsley
  • 1 cup chopped onions
  • 1 tbsp. seasoned salt or plain
  • Pepper
  • 1/4 cup boiling water
  • 3 tbsp. melted butter

Step 1

Take pork out of refrigerator an hour in advance. Preheat oven to 425. Rub meat with garlic and salt. Place roast, fat side up, on rack in shallow open pan. Roast pork 1 hour at 425. Reduce heat to 400. Remove pork from pan and pour off all fat.

In pan, toss potatoes with onion, parsley, salt, and pepper, pour in boiling water; lay pork on top; then brush potatoes with butter. Roast all about one hour at 400.

Serves 6-7
