Ingredients

  • Bottom layer:
  • 3/4 c. melted butter
  • 1 c. flour
  • 1 c. packed brown sugar
  • 1 c. Nilla wafers
  • 1/2 c. medium unsweetend coconut
  • 1/2 tsp. salt
  • Filling:
  • 1 c. dried apricots
  • enough water to cover the apricots
  • 2 large eggs
  • 1 c. packed brown sugar
  • 1 tbsp. lemon juice
  • 1/3 c. flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt

Preparation

Step 1

Bottom layer: Melt butter. Combine 5 dry ingredients in medium bowl. Add the melted butter. Mix well. Reserve 1 c. crumb mixture. Press remaining mixture firmly into ungreased 9 x 9 pan. Bake for 10 minutes at 350 F.

Filling: Place apricots in small saucepan. Add enough water to cover them. Bring to a boil on medium heat. Reduce heat to medium-low. Simmer, uncovered, for about 15 minutes until apricots are softened. DRAIN WELL. Chop.

Beat eggs in medium bowl until frothy. Add brown sugar and lemon juice. Stir well.

Combine remaining 3 ingredients in small bowl, stir into egg mixture. Add apricot and stir well. Spread evenly over bottom layer. Sprinkle with reserved crumb mixture. Bake for 30 to 35 minutes until golden. Make sure it is cooked. Let stand in pan on wire rack until cool.

Cuts into 36 squares.
