  • 4 eggs
  • 2 cups herb croutons
  • 1/2 cup Parmesan cheese
  • 1/2 teaspoon thyme
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 medium onion, chopped
  • 3/4 cup melted butter
  • 2 (10 ounce) package frozen chopped spinach, cooked for 10 minutes, drained well.

Step 1

Preheat oven to 350 degrees F.

Beat eggs. Add rest of ingredients. Mix well. Place in refrigerator about 3 hours or overnight. Make sure mixture is cool. Roll into balls about the size of walnuts. Place on greased cookie sheet. Bake at 350 degrees F. for 15 minutes.
