Ingredients

  • 2 jalapeno peppers, halved and seeded
  • 1/2 onion
  • 2 cloves minced garlic
  • 1 slice 1/4" thick of peeled fresh ginger
  • 1 T olive oil
  • 1 T white wine vinegar
  • 1 tsp jerk seasoning (onion, thyme, allspice, pepper, cinnamon, cayenne, salt)
  • 1 tsp ground allspice
  • 1/4 tsp salt
  • 4 chicken breasts
  • 1/2 mango, peeled and finely chopped
  • 1 T fresh cilantro, chopped

Preparation

Step 1

Preheat oven to 450. Coat 13x9 pan with spray.

In food processor, combine ingredients through salt. Spread mixture on chicken in pan. Bake for 30 minutes. Place on plates, and scatter mango on top. Sprinkle with cilantro.
