Ingredients

  • 1 bunch arugula, roughly torn
  • 2 Belgian endive, sliced
  • 2 Tbsp olive oil
  • 1 1/4 inch thick slice pancetta, finely diced
  • 4 tsp balsamic vinegar
  • salt and freshly ground black pepper to taste

Preparation

Step 1

Combine arugula and endive in large salad bowl.

Heat oil in a large frying pan over med-high heat. Add pancetta and cook 3 to 4 minutes or until crispy. Remove pan from heat, add balsamic vinegar and deglaze. Place warm dressing over greens. Season with salt and pepper and toss well. Makes 6 servings.
