Turkey, Bacon, Mayo and Cheddar Pannini

Ingredients
- 4 thick slices thick-cut bacon
- 3 T. mayo
- Four 1/2 inch thick slices rye or whole wheat bread
- 1/2 cup watercress, or other greens
- 8 thin slices (4 oz.) turkey breast
- 2 oz. best-quality aged Cheddar, thinly sliced

Preparation
Step 1
Cook the bacon till crisp but not dry. Drain on paper twoels. Cut each slice in half so you have 8 short pieces.
Heat a panini or sandwich press according to manufacturer's instructions.
Spread some mayo on each slice of bread. Arrange the greens on top of the mayo. Arrange turkey on top of the greens. Lay the bacon on top of the turkey., Arrange the cheese slices on top of the bacon. Top each sandwich with a piece of the bread, mayo down,
Pit the sandwiches on the press, pull the top down, and cook until they are browned and crisp and the cheese is melted, 5 to 7 minutes.
