Sweet 'n' Salty Chicken

This is another recipe that is one my favorites that Kayla has found in my old recipes. Even though it is made with honey, it has a very balanced flavor of sweet and sour.

Ingredients
- 4 Chicken Breasts
- 2 Chicken Thighs
- 6 Tbsp olive oil
- 6 Tbsp soy sauce
- 6 Tbsp honey
- 3 Tbsp white vinegar
- 1 1/2 tsp paprika
- 1 1/2 tsp dried thyme
- 1/2 tsp ground allspice
- 1 tsp pepper
- 2 cups cooked rice

Step 1
Preheat the oven to 375 degrees Fahrenheit. Combine the olive oil, soy sauce, honey, vinegar, thyme, paprika, allspice, and pepper in a shallow baking dish; Mix well. Pierce both sides of each pieces of chicken with a fork. Place the chicken in the baking dish and turn the chicken several times using a pair of tongs. Bake the chicken, basting several times with the sauce in the dish, for 30 minutes. Cover the chicken and continue baking for an additional 30 minutes or until the chicken is completely cooked. Spoon the rice onto a serving platter. Arrange the chicken over the rice and drizzle a small amount of the sauce over the chicken. Serve the remaining sauce on the side.
