Ingredients
- 1 large onion, chopped fine
- 2 cloves garlic, chopped fine
- 2 (4 1/2 ounce) jar marinated artichoke hearts (small jars)
- 8 eggs, beaten
- 1/2 cup dry fine bread crumbs
- 1/2 teaspoon salt
- 1/4 teaspoon oregano
- 1 pound sharp cheddar cheese, shredded
- 2 tablespoons chopped parsley
- 2 (5 ounce) cans chopped green chiles

Step 1
Preheat oven to 350 degrees F.
Saute' onion and garlic in the oil from just one jar of artichoke hearts. Drain and discard oil from scond jar. Chop artichokes. Beat eggs, add bread crumbs and seasonings. Stir in cheese, parsley, artichokes and onion and green chiles. Pour in cookie sheet 13x15 with rim. Bake 30 minutes at 350 degrees F.
