Ingredients
- 1-pound beef top sirloin steak, about 3/4-inch thick
- 1/4 tsp. coarsely ground pepper
- 1 cup beef broth
- 1 T. all-purpose flour
- 2 tsp. Dijon mustard
- 2 tsp. Worchestershire sauce
- 1/2 tsp. grated lemon peel
- 2 T. chopped fresh chives

Step 1
Remove fat from beef. Cut beef into 4 pieces. Spray 12-inch nonstick skillet with cooking spray; heat over medium heat. Sprinkle both sides of beef with pepper. Cook beef in skillet 9-11 minutes for medium doneness, turning once. Remove beef from skillet; keep warm.
Mix remaining ingredients except chives until smooth; add to skillet. Heat to boiling. Boil 1 minute, stirring constantly. Stir in chives. Serve over beef.
