  • 1 cup soft butter
  • 1 1/2 cups flour
  • 1/4 tsp baking soda
  • 1 1/2 cups sugar
  • 1/4 cup brandy
  • 5 large eggs, separated
  • pinch of salt
  • 1 tsp cream of tartar

Preparation

Step 1

Cream butter and 3/4 cup sugar. Add brandy. Beat in the egg yolks one at a time. Add flour and soda. In a separate bowl, beat egg whites and salt until stiff but not dry. Gradually beat in remaining 3/4 cup sugar and cream of tartar. Fold the egg white mixture into the batter mixture until lightly but thoroughly mixed. Bake at 350 degrees for 1 hour. Cake may be frozen.
