Ingredients

  • 3 cups  all-purpose flour
  • 1 cup  raisins
  • 1/4 cup  sugar
  • 1 tablespoon  caraway seeds
  • 2 teaspoons  baking powder
  • 1 teaspoon  salt
  • 1/2 teaspoon  baking soda
  • 1 1/2 cups  nonfat buttermilk
  • Vegetable cooking spray

Preparation

Step 1

Combine first 7 ingredients in a large bowl; stir well. Add buttermilk; stir well until a dough forms. Turn dough out onto a lightly floured surface, and knead lightly 3 to 4 times. Pat dough into an 8-inch round cakepan coated with cooking spray.

Bake at 350° for 45 minutes or until a wooden pick inserted in center comes out clean and bread is golden. Let cool in pan 5 minutes; loosen edges of bread with a knife. Remove from pan; let cool on a wire rack. Cut into wedges.
