1. Drizzle some canola oil into a medium skillet set over medium-high heat. If the hole in the middle of your bagel is relatively small - smaller than an egg yolk - cut it open a bit with a knife or tear it larger with your fingers.
2. Place half a bagel cut-side-down in the hot skillet, and break an egg into the middle; the yolk will settle in the whole and the whites will run around and underneath. Sprinkle with salt and pepper.
3. Turn the heat down to medium and cook until set and crispy on the bottom, then carefully flip it over and cook until it's set on the other side, without cooking the yolk through, unless you want it that way. Invert onto a plate and serve.
