Ingredients

  • 3 lbs flank steak or bottom round beef
  • 1/4 C soy sauce
  • 1/4 C Worcestershire sauce
  • 2 TBLS liquid smoke
  • 1 tsp Season salt (I use Johnnies)
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp pepper
  • 1/4 tsp cayenne
  • 3 dashes Tabasco

Preparation

Step 1

Mix together sauces and seasonings, then add to sliced beef. Marinate in covered non-metal container for at least 5 hours - overnight

Oven method - Spread meat in single layer on racks placed on baking sheets covered with foil to catch drips. Bake at 150° for 8-10 hours.
Turn oven off and let sit for 4 hours. Store in air-tight containers for up to six months.

Dehydrator method - Place meat in single layer on racks. It takes about 8 hours at 155°. Check doneness by bending a slice. It should be slightly pliable and should have a stringy appearance at the bend.
