Ingredients

  • 3 large red peppers
  • 1 1/3 cups (6 oz) Feta cheese crumbled
  • 2 Tbsp pine nuts
  • 1 Tbsp olive oil

Step 1

To char peppers: Cut peppers in thirds and remove seeds. Place cut-side down on cookie sheet. Broil until skins are blackened and puffed. Put peppers in a covered casserole and let stand for 10 minutes to steam. Remove and peel.
Place all ingredients in food processor and blend. Refrigerate until ready to serve. Serve with crackers or fresh vegetables.

Note: This recipe is from the Best of Bridge. They recommend making it the day before you need it to let the flavors blend.
