  • Cut-up Chicken Fryer Parts, washed and patted dry (3/4 pound uncooked chicken per serving)
  • Paprika
  • Salt and pepper
  • Canola oil
  • 1 large onion per 4 servings, sliced thinly

Preparation

Step 1

Heat oven to 450 degrees. Season chicken with salt, pepper and paprika. Rub all over with oil. Place in an uncovered roasting pan and bake 15 minutes, turning once.

Reduce heat to 350 degrees, scatter sliced onions over chicken, cover and bake 60-80 minutes, basting frequently with stock and/or drippings, until golden brown and an instant-read thermometer registers 180 degrees. If chicken isn't browning, remove cover. Serve with pan drippings and caramelized onions.
