Ingredients

  • 1 c. flour
  • 1 tsp. salt
  • 1 tsp. pepper
  • 2-3 lb. beef stew meat
  • vegetable oil
  • 1 onion
  • 3 ribs of celery
  • 1/4 c. flour
  • 1 tsp.salt
  • 1/2 tsp. pepper
  • 1 Tbs. garlic salt
  • 3 Tbs. tomato paste
  • 3-4 large carrots
  • 1-11.2 oz bottle of Guinness beer
  • 2 c. water

Preparation

Step 1

1. In a pie pan mix first 3 ingredients. Coat meat in the flour mixture.
2. Heat up 2 tbs. of oil in a heavy pan on medium heat. Brown* meat in batches
adding more oil if needed. Place browned meat into a 6 Qt. crock pot.
3. Chop onion and celery. Saute' with 1 tbs. oil, in the same pan that the meat
was cooked.
4. When the onion is translucent add 1/4 c. flour, 1 tsp. salt, 1/2 tsp. pepper and
1 Tbs. garlic salt, cook for 1-2 minutes.
5. Deglaze the pan with the beer. Adding it slowly while scraping the bottom of
the pan to release all the bits stuck to the bottom. Then add the water and tomato
paste. Bring to a boil.
6. Pour the sauce over the meat in the crock pot and combine. Add more water if
needed.
7. Turn crock on high for 1 hour then turn it down to low for 5 hours adding the
chopped carrots 1 hour before cooking time is complete.
