So most days, when I am craving something, I can find one of our recipes to satisfy my sweet tooth. I asked all my sisters to see if there was a chocolate cheesecake recipe on our site - and there wasn't one! I was shocked! I searched all over, and found this one on All Recipes. It had 5 stars - every single reviewer gave it 5 stars!! I was a little skeptic at first, but I was NOT disappointed. My husband asked me to make it for his birthday every year from now on!

Ingredients

  • Crust (or you can use a pre-made crust!)
  • 18 oreos, finely crushed
  • 2 tablespoons white sugar
  • 1/4 cup butter
  • Filling
  • 1/4 cup semisweet chocolate chips
  • 1/4 cup heavy whipping cream
  • 3 8-oz packages cream cheese, softened
  • 1 cup white sugar
  • 1/3 cup unsweetened cocoa
  • 3 eggs
  • 1 teaspoon vanilla extract
  • Topping
  • 1 1/2 cups semisweet chocolate chips
  • 1/4 cup heavy whipping cream
  • 1 teaspoon vanilla extract

Preparation

Step 1

Preheat oven to 350 degrees. Lightly coat 9" pie pan (or 9" springform pan) with cooking spray. Mix together crushed oreos, sugar and butter, and press into the bottom of the pan. Bake for 10 minutes, and remove from the oven. Reduce the heat to 325 degrees.

In a small sauce pan, combine 1/4 cup of chocolate chips and whipping cream until completely incorporated. Set aside. In a large bowl, combine cream cheese and one cup of sugar until smooth. Add cocoa and mix well, then add eggs until blended. Stir in the chocolate chip mixture and teaspoon of vanilla. Place in oven and bake for 40-45 minutes (until the edges start to crack).

In a different small sauce pan, mix together 1 1/2 cups chocolate chips, whipping cream, and vanilla extract on low heat. Stir continuously, making sure it doesn't burn, until the mixture is smooth. Pour on top of the cheesecake, and refrigerate for at least four hours (it's best if it's refrigerated overnight).

I topped it with my favorite fruit - raspberries!
