Ingredients
- 12 oz can evaporated milk, divided
- 3 C cooked short or medium grain white rice
- 1 C canned pumpkin
- 3/4 C brown sugar, divided
- 1 tsp pumpkin pie spice
- salt
- 1 TB butter
- 2/3 C coarsley chopped pecans

Preparation
Step 1
Reserve 2 TB evaporated milk; set aside for topping.
In heavy saucepan over medium heat, combine remaining milk, cooked rice, pumpkin, 1/2 c brown sugar, pumpkin pie spice, and salt. Stirring occasionally, cook 8-10 minutes or until pudding begins to thicken. Pour into 2 quart serving dish or individual dishes.
Topping:
Melt butter in heavy skillet on low. Add remaining sugar and milk; cook 1-2 minutes or until smooth. Stir in nuts. Spoon over pudding. Serve at room temperature.
