Persimmon Cookies

These cookies are sooooo yummy and a great way to use overripe persimmons of any kind. This recipe came from my Grandmother Audrey Morgan (Mama).

Ingredients

  • 1 c nuts (optional)
  • 1 c raisins (optional)
  • 2 c flour
  • 1 t baking soda
  • 1/2 t cloves
  • 1/2 t cinnamon
  • 1/2 t nutmeg
  • 1/2 t salt
  • 1 c sugar
  • 1/2 c shortening
  • 1 egg
  • 1 c persimmon pulp

Preparation

Step 1

Mix in a bowl: Nuts, raisins, flour, baking soda and spices.
Cream together Sugar, shortening and egg. Add persimmon
pulp and blend in. Slowly add dry ingredients. Drop by
spoonfuls onto un-greased cookie sheet.
Bake at 400 deg for about 15 minutes.

Note: Nuts/Raisins are totally optional. I usually make the cookies without either
