Ingredients

  • PASTRY:
  • 2 cups sifted all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup shortening
  • 2 egg yolks unbeaten
  • 1 tablespoon lemon juice
  • 7-8 tablespoons cold water
  • FILLING:
  • 8 medium apples
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1 tablespoon flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Step 1

Sift flour with salt. Cut in the shortening. Combine egg yolks, lemon juice and water. Add to dry ingredients and stir until moistened. Divide dough into two portions. Roll half of dough about thickness of pie dough and line a shallow pan 7" x 12". Roll second portion in oblong shape to fit the top of pan.

FILLING:

Pare apples, core and cut into thin slices. Sift flour, salt, sugar and spices together and sprinkle over apples in bowl. Shake until apples are coated with mixture. Turn into dough lined pan and top with crust. Seal edges of dough. Bake at 350 degrees about 1 hour or until apples are tender and crust is nicely browned. When cool frost with a powdered sugar frosting.
