Ingredients
- Orange Frosting:
- 1 1/2 t. orange zest
- 1/4 c. fresh orange juice
- 3 T. butter, melted
- 1 t. vanilla
- 1/2 t. orange flavoring
- 1 egg yolk
- 1 c. sifted cake flour
- 2/3 c. sugar, divided
- 1 1/2 t. B.P.
- 1/8 t. salt
- 4 egg whites
- 1/8 t. cream of tartar
- 1/2 c. sugar
- 1/8 t. cream of tartar
- 3 T. water
- 1 egg white
- dash of salt
- 1 t. orange zest
- 1/2 t. orange flavoring
- 2 drops red food coloring
- 2 drops yellow food coloring

Preparation
Step 1
Combine first 6 ingd. in bowl, stir well and set aside. Combine flour, 1/3 c. sugar, B.P. and salt in large bowl. Add orange juice mixture; beat at low until smooth. Set aside.
Beat egg whites (room temperature) and cream of tartar at high speed until foamy. Gradually add remaining 1/3 c. sugar, 1 T. at a time, beating until stiff peaks form. Gently stir 1/4 egg white mixture into orange batter. Gently fold remaining egg white mixture into batter.
Divide among 12 paper-lined muffin cups. Bake 350* 20 minutes or until lightly browned. Remove from pan, let cool on wire rack. Frost.
Combine sugar, cream of tartar, water, egg white and salt in top of double boiler. Place over simmering water, beat on high speed until stiff peaks form.
Remove from heat; add zest, flavoring, food coloring, beating at high speed until well blended.
