Ingredients

  • 2-3 oz (55-85g) brown rice 1/2 cup
  • 1 small onion
  • 1 tbsp vegan margarine
  • 4-5 oz (115-140g) tofu
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/4 tsp turmeric
  • 1/4 tsp chilli powder
  • 1/2 tsp garam masala
  • 2 tbsp water
  • 1 tbsp tomato paste
  • 1 tbsp soya yoghurt
  • sea salt if required

Preparation

Step 1

1- Cook the rice until tender.
2- Chop the onion. Saute it in the margarine in a saucepan for about 3 minutes. Meanwhile, drain and dice the tofu.
3- Lower the heat and stir in the spices. Then add the tofu, stirring it well but gently so that it is well coated with the spices. After a minute or two add the water and stir in the tomato paste. Cover the pan and simmer for about 10 min. Stir in the yoghurt, taste for seasoning and add salt if wanted.
4- Serve the curry over the rice (accompanied by chapati or poppadum and chutney)
