Ingredients
- 2 Cups Heavy Cream
- 1/2 - 1 cup grated parmesan
- 1 shallot, finely chopped
- 2 cloves garlic, finely chopped
- salt, pepper, dash of cayenne (optional)
- 1 TB butter
- OPTION - Add chopped Sundried Tomatoes to sauce

Preparation
Step 1
Sweat shallot and butter over low heat, making sure not to brown the garlic.
Add cream, bring to a simmer. Simmer until the cream thickens slightly.
Remove cream from the heat, and with a wooden spoon, stir in the parmesan cheese. Once the cheese has melted, season.
Optional - strain the sauce.
Toss pasta into the warm sauce before plating.
