Ingredients

  • 12 oz. low-fat sausage
  • 1 tsp. poultry seasoning
  • 4 1/2 c. sourdough bread cubes or croutons
  • 8 oz. shredded sharp cheddar cheese
  • 1 tsp. mustard powder
  • 2 lg. eggs
  • 4 egg white OR 1/2 c. egg substitute
  • 2 c. milk

Step 1

Crumble sausage into med. skillet. Cook over med. heat till brown, breaking up into bits. Sprinkle w/ poultry seasoning. Coat a 9x13 pan w/ cooking spray and set aside.

Add sausage to large bowl along w/ toasted bread squares, cheese, mustard powder and salt, if desired. Add whole eggs, egg whites (or egg substitute) and milk to mixing bowl, and beat on med-low speed till smooth and completely blended.

Drizzle egg-milk mixture over the sausage and bread mixture; stir to blend. Pour into the prepared baking dish, spread top evenly, cover w/ foil, then chill in the fridge for 8 hours or overnight.

Preheat oven to 350 and bake, covered, for 45 mins. Uncover, reduce temp to 325. Bake for about 20 mins. or till set.
