  • 12 ounces mixed dried beans
  • 8 cups water
  • 1/2 pound ground beef, cooked and drained
  • 1 can diced tomatoes, undrained
  • 1 cup chopped celery
  • 1 tablespoon salt
  • 1 teaspoon dried parsley
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 2 bay leaves

Step 1

Sort and rinse beans. Place in a Dutch over or soup kettle; add water to cover by 2 inches. bring to a boil; boil for 2 minutes. Remove from heat; cover and let stand for 1 to 4 hours or until beans are softened.

Drain and rinse, discarding liquid. Add water to the beans; bring to a boil. Cover and simmer for 30 minutes. Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 1 1/2 to 2 hours or until beans are tender. Discard bay leaves.
