Ingredients
- 2 lg. bunches of escarole
- 3 cloves garlic dhopped fine
- 1 lb hot Italian sausage removed from casing
- 1/4 cup olive oil
- 1 stalk celery chopped
- 1 can white cannelini beans undrained

Preparation
Step 1
Fry sausage and drain. Add oil and garlic and celery to sausage. Cook for 2 mins. Add washed escarole. Sprinkle with Italian seasonings or oregano. Add 2
cans chicken broth and 1 can water. Simmer 20 mins.
