- 6 tbs Japanese soy sauce
- 2 tbs sugar
- 2 tbs mirin
- 4 dried shiitaki mushrooms
- 1 pound udon noodles
- 4 medium shrimp
- 4 eggs
- 4 scallions. chopped

Step 1
In a dutch oven bring dashi to a boil.
Reduce to simmer and add salt to taste, soy sauce, sugar and mirin. Soak mushrooms in boiling water 20 min. Discard stem and add caps to broth. Simmer 15 min.
meanwhile , boil noodles in 6 quarts of water. drain and rinse well under cold water.
To serve divide noodles into four small heat-proof casseroles. Arrange shrimp over noodles. Ladle both into each casserole., cover and bring to boil. with back of spoon make a nest in noodles. one at a time , crack open and egg and drop into each nest. cover and simmer until eggs are cooked but yokes are still soft. Sprinkle with scallions and serve hot.
