Ingredients

  • Pie:
  • 1 cup maple syrup
  • 1 cup light brown sugar
  • 1 tbs. molasses
  • 1/2 cup heavy cream
  • 4 tbs. unsalted butter
  • 1/2 tsp. salt
  • 6 large egg yolks
  • 1/2 cup, coarse chopped toasted pecans
  • pie dough
  • Whipped cream (optional):
  • 1 cup chilled cream
  • 2 tbs. bourbon
  • 1 1/2 tbs. brown sugar
  • 1/2 tsp. vanilla extract

Preparation

Step 1

In a saucepan, place syrup, sugar, molasses and cream and simmer 3 min. over medium heat till sugar dissolves. Let cool 5 min. Add butter and salt and egg yolks and whisk.

Toast and coarse chop pecans.
Chill pie dough in fridge for 30 minutes.
Preheat oven to 45o degrees

Put pecans into chilled dough, then pour in wet ingredients.

Place pie on bottom rack and cook at 325 degrees for 1 hr. Pie should jiggle when shook. Cool on counter for 1 hr. Refrigerate for 3 hours. Serve at room temperature.

To make whipped cream:
Mix cream, bourbon, sugar and vanilla extract until fluffy.
