Ingredients
- 1 pkg extra thin chicken breasts
- cut each piece in 2
- panko crumbs
- pesto (bought or prepared)
- salt
- pepper
- paprika
- 5 tbs olive oil
- 3 cloves garlic minced
- PESTO INGREDIENTS
- 2 cups fresh basil leaves
- 1/2 cup pine nuts
- 4 cloves garlic
- 1 cup olive oil
- salt
- pepper

Preparation
Step 1
spread pesto on both sides of each chicken breast. roll up lengthwise.
mix panko crumbs with spices
dredge chicken in mixture and place in baking pan with Pam
cover and refrigerate for 6-8 hours
preheat to 350
heat olive oil in small pot. add minced garlic
bring to simmer over low heat and cook for additional 1-2 min, stirring occasionally.
drizzle mixture over the chicken rolls and bake for 25 min. (longer if bigger chicken)
PESTO instructions
combine basil, a few tbspns olive oil and remaining ingredients in food processor. process till finely chopped. pour remaining oil through the food chute while processor is running to form thick paste.
