Ingredients
- 10 Brussels sprouts, halved
- 1 medium red onion, cut into thick wedges
- 2-3 cloves of garlic, minced
- bacon bits
- 10-12 ounces whole wheat pasta
- 1/2 cup grated Parmesan
- 2 tbsp extra virgin olive oil
- Salt and pepper
Preparation
Step 1
Preheat oven to 425°
1. Combine brussels sprouts, red onion, red peppers, garlic and olive oil in a bowl and stir. Add salt and pepper
2. Line a cookie sheet with tin foil. Roast the veggie mixture for 15 minutes or until brown.
3. Add the veggie mixture, Parmesan cheese, and bacon bits to cooked pasta & serve.
