Mocha Cheesecake

Ingredients

• Crust
• 3/4 Cup graham cracker crumbs
• 4 Tbsp butter
• 1 1/2 Tbsp sugar
• Line bottom of large springform pan
• Cake
• 3 8oz Packages cream cheese
• 1 Cup sugar
• 2 Large eggs
• 8 oz Semi sweet chocolate
• 2 Tbsp heavy cream
• 1 Cup sour cream
• 1/2 Cup strong coffee or rum

Preparation

Step 1

Add 1 cup sugar to cream cheese and beat until smooth
Add 2 large eggs and continue beating
In a double boiler, melt 8oz semi sweet chocolate chips
Add heavy cream and fold into cream cheese mixture
Add sour cream and coffee (or rum)
Pour into crust and bake at 350 for 45 minutes
Cool and refrigerate
