Greens

This recipe is for any kind of greens. If you use collard greens, substitute the olive oil with bacon drippings and do not add the ancho chili powder.

Ingredients
- 2 bunches of greens (turnip, beet, swiss chard, etc all work)
- 1/8-1/4 EVOO
- salt and pepper to taste
- 1-2 tsp ancho chili powder
- 1/2 tsp granulated garlic

Preparation
Step 1
1. Heat the olive oil over medium heat, until shimmering. Add the greens and mix well to coat all greens with the oil.
2. Add the ancho chili powder, granulated garlic, salt and pepper. Mix well. Once mixed, taste one of the greens after they have cooked for a couple of minutes, to test the spices. Add additional chili powder and/or garlic, to taste. Mix well.
3. Cook the greens to your desired texture. 4-5 minutes for just wilted greens OR let them cook for as long as you like, to desired consistency
*Again, if you use collard greens, substitute bacon drippings for the EVOO and eliminate the ancho chili powder. You can also eliminate the garlic if you prefer.
