Ingredients

  • 2 cups sliced onions or frozen chopped onion, thawed
  • 1 cup chopped green or red pepper or frozen pepper stir-fry, thawed
  • 2 Tbsp. butter, margarine or vegetable oil
  • 3/4 to 1 pound regular or lean ground beef
  • 15 -ounce can diced tomatoes or stewed tomatoes, chopped
  • 4 -ounce can chopped olives, drained (optional)
  • 1/2 cup uncooked white rice
  • 1 teaspoon chili powder
  • 2 tsp. salt
  • 1/8 tsp. pepper.

Preparation

Step 1

Heat oven to 350 degrees.

Saute onion and green pepper in butter.

Add meat. Stir in remaining ingredients.

Put mixture into a greased 2 quart casserole.

Cover and bake 45 minutes.

Remove cover and return to oven for another 15 minutes.
