Ingredients
- 2 tbsp olive oil
- 2 garlic cloves, roughly chopped
- 1 brown onion, roughly chopped
- 1 leek, sliced
- 1 celery stalk, chopped
- 250 g chorizo, roughly diced
- 2 tbsp smoked paprika
- 1 tbsp tomato paste
- 500 ml hot chicken stalk
- 2 medium white potatoes, diced
- 410 g can cannellini beans, drained & rinsed
- 2 tbsp chopped fresh parsley

Preparation
Step 1
Heat oil over moderate heat in a large saucepan. Add garlic, onion, leek & celery and cook, stirring for 5-7 minutes, or until vegetables are soft but not colored. Add chorizo and cook, stirring occasionally, for about 4 minutes, then stir in paprika and tomato paste. Add hot stock, potatoes and cannellini beans, bring to the boil and simmer 15 minutes, or until potatoes are cooked. Season to taste. Serve sprinkled with chopped parsley and your favorite red wine.
