Royal Icing for Star Wars cookies

this is a tricky recipe but it naturally goes smooth if its watery enough. Makes for great fine details.

- 3 egg whites (I use merguine powder)
- 4 1/2 cups of powdered sugar
- 1/2 tsp cream of tartar
- pinch of salt
- a few drops of vanilla extract or lemon juice
- food coloring

Step 1
In the bowl of an electric mixer fitted with teh whisk attachment, beat the egg whites, powdered sugar, cream of tarter and salt on medium-low speed until blended. Add teh vanilla or lemon juice, increase the speed to medium high, and continue beating until stiff peaks form and the mixture is nearly triple in volume, 7 to 8 minutes.
Remove teh bowl from teh mixer, cover tightly with plastic wrap and store at room temperature until ready to use, up to 6 hours. For tinted icing, divide the icing into small bowls and stir in a few drops of food coloring. Makes about 5 cups.
