Ingredients
- 1/3 cup sugar
- 1/4 cup plus 1 tbsp water
- 3/4 cup whole milk
- 1/4 cup heavy cream
- 5 egg yolks
- 1 tsp vanilla extract
- salt

Step 1
Preheat oven to 325. Heat sugar and water in a pan over medium heat, swirling, until deep amber, 7 minutes. Carefully whisk in cream and milk.
Whisk together yolks, vanilla, and a pinch salt. Slowly pour caramel mix into yolk mix, whisking constantly. Skim bubbles from top. Divide among 4 6-oz dishes.
Set dishes in a 9 inch square baking dish. Pour boiling water into dish to come halfway up sides of dishes. Bake until custards are just set but jiggle slightly, 25-30 minutes. Remove from water with tongs, refrigerate 20 minutes.
Can top with whipped cream.
