Ingredients
- 1 med onion, chopped
- 2 T canola oil
- 2 garlic cloves, minced
- 2 lbs beef stew meat, cut into 1 in cubes
- 2 c water
- 1 can (14.5oz) stewed tomatoes
- 1 can (10oz) diced tomatoes with green chiles, undrained
- 1 can tomato soup, undiluted
- 1 can fat free beef broth
- 1 can fat free chicken broth
- 1 T worcestershire sauce
- 1 t ground cumin
- 1 t chili powder
- 1 t salt
- 1 t lemon pepper
- 1/2 t hot pepper sauce
- 10 corn tortillas (6in ea)
- low fat cheddar cheese, fat free sour cream and sliced green onions, optional for topping

Preparation
Step 1
In a dutch oven, saute onion in oil until tender. Add garlic; cook 1 min longer. Stir in the next 13 ingredients; bring to a boil; Reduce heat; cover and simmer for 1 1/2 hours or until beef is tender.
Tear tortillas into bite size pieces, add to soup. Simmer, uncovered, for 10 min. Let stand for 5 min. Garnish if desired.
