Ingredients
- 3 lb chicken thighs, skinless
- 1 green pepper, chopped
- 1 red pepper, choppped
- 1 whole yellow onion, diced
- 1 or 2 cloves minced garlic
- flour
- salt pepper
- 1 1/2 teaspoon curry powder
- 1/2 teaspoon thyme
- 5 cups canned whole tomatoes
- 1 tablespoons minced fresh parsley
- 3 cups cooked rice
- 1 cup petite peas
- 1/2 cup of currants

Preparation
Step 1
Healt 3 tablspoons olive oil in deep skillet. Fry chicken thighs until lightly brown on both sides. Remove. Add chopped onions and peppers and garlic. Cook until lightly brown. Add herbs, then add chicken and then add 5 cups of tomato sauce. Place in oven on 350* for about minutes.
Meanwhile, cook rice, and rinse, add peas, then add currants.
Let the chicken rest out of oven for about 10 minutes and then add rice on plate and then cover with chicken and sauce.
