Tortilla Soup

  • 4 T. vegetable oil
  • 1/2 a medium onion, chopped
  • 3 cans diced tomatoes, drained
  • 6 c. chicken broth
  • 1 T. ground cumin
  • 1 1/2 T. chili powder
  • 1 T. minced garlic
  • 1 can enchilada sauce
  • 1 T. chopped cilantro
  • 2 t. chopped green chilies
  • 1 t. Worcestershire sauce
  • 1 c. corn tortilla, cut in strips
  • 1 c. shredded cheddar cheese


Cooking time 60mins


Step 1

Saute onions in a large saucepan in oil until transparent. Add tomatoes and cook, stirring until tomatoes are softened. Cool and then puree in blender or food processor. Return to pan and add rest of ingredients, except tortilla strips and cheese. Simmer, stirring occasionally, about 30 minutes. Add tortilla strips and heat about 10 more minutes. Serve with additional tortilla chips and cheese.
