Wagamama's Green Curry Paste

Ingredients
- 6 green chillies, roughly chopped
- 1 lemongrass stalk, outer leaves removed, thinly sliced
- 3 kaffir lime leaves, finely sliced
- 1 cm piece ginger root, peeled & grated
- 1 bunch of coriander stems, finely chopped
- 1 tsp cumin seeds, roasted in a hot dry frying pan
- 2 garlic cloves, peeled & roughly chopped
- 1 tbsp finely chopped shallot
- 1 tsp shrimp paste (available from Oriental stores)
- 1 tbsp vegetable oil

Preparation
Step 1
Blitz all the ingredients in a processor or pound in a pestle and mortar to a fine paste.
Keeps indefinitely in the fridge.
