Ingredients
- 3 tbsp butter or margarine
- 1 1/2 lbs zucchini, cut into 1/2 inch cubes
- 1 1/2 cups (10 oz pkg) corn, uncooked
- 1 red or green bell pepper, seeded and chopped
- 1 medium size onion, chopped
- 1 clove garlic, minced and pressed
- Salt
- Pepper

Step 1
Melt butter in a wide frying pan over medium-high heat. Add zucchini, corn, bell pepper, onion and garlic. Cook, stirring frequently, until most of vegetable liquid has evaporated and vegetables are crisp-tender (about 5 minutes). Add salt and pepper to taste.
