Ingredients
- 2 medium zucchini, cut into 1/4 inch slices
- 1 small eggplant, cut into 1/2 inch cubes
- 1 large green pepper, cut into thin strips
- 1 medium onion, thinly sliced
- 2 cups cherry tomatoes
- 1/2 cup water
- 4 tbsp butter, cut into small pieces
- 1 small jar pimento stuffed olives, drained and cut in half
- 1 tsp salt
- 1/4 tsp pepper
- 1 tsp sugar
- 1/2 tsp basil

Preparation
Step 1
On double thickness of heavy-duty foil, mix all ingredients. Wrap vegetable mixture in foil, being careful that seam of foil is folded several times to seal in juices. Place foil package on the grill over medium heat; cook 25 minutes or until vegetables are tender, turning package occasionally with tongs.
To cook on top of range: About 30 minutes before serving, in covered 12-inch skillet over medium heat, cook all ingredients until vegetables are tender, about 10 minutes, stirring occasionally.
