Jansson's Temptation

This traditional Swedish gratin is utterly moreish. The name probably does not refer to a specific Jansson but means "everyone's temptation" as Jansson is a common Swedish surname.

Ingredients
- 2 lbs potatoes
- 2 large, sweet onions, sliced
- 2 oz cans anchovies in olive oil, drained
- 2 cups whipping cream or half and half double (heavy) and single (light) cream

Step 1
Preheat oven to 400 degrees F. Cut the potatoes into thin slices, then cut the slices into matchstick strips. Sprinkle half of them in the base of a greased shallow 6 1/2 cup baking dish.
Lay half of the onions on top of the potatoes, and season with black pepper. Lay the anchovies on top of the onions, then add the remaining onions and potatoes.
Mix the cream with 2 tablespoons cold water and pur over the potatoes and onions. Cover with foil and bake for 1 hour, then reduce the oven temperature to 350 degrees and uncover the dish. Bake for a further 40-50 minutes, or until the potatoes are golden and tender when tested with a knife.
