Ingredients

  • 2 cups cubed eggplant
  • 1 onion, chopped
  • 2 medium peppers
  • 1/2 cup fresh chopped parsley
  • 1 tbsp marjoram or oregano
  • Salt, to taste
  • Pepper, to taste
  • 2 cups cubed zucchini
  • 2 medium tomatoes
  • 2 cups tomato juice
  • 2 tbsp onion flakes
  • 2 cloves garlic, lightly crushed

Step 1

All unpeeled vegetables should be cubed or cut in bite sized pieces. Combine in a saucepan with remaining ingredients. Heat to boiling then lower heat. Cover and cook gently for 30 minutes, stirring occasionally.
