Ingredients

  • 1 zucchini, sliced in 1/2 inch rounds
  • 3 mushrooms, quartered
  • 1/2 yellow crook neck squash, sliced in 1/2 inch rounds

Preparation

Step 1

Steam above ingredients (zucchini, mushrooms, crook neck squash) in a vegetable steamer using about 1 inch of water. Cook for about 5 to 7 minutes or until squash is tender. Save water for later use in soup stock. The water can be stored in a container in the refrigerator until you are ready to use it.

Top the vegetables with your choice of the following:

2 tbsp mayonnaise, chopped green onions with some Spike seasoning or 2 tbsp of avocado dip or dressing or 1 tsp olive oil and 1 tsp lemon juice

Other Vegetable Combinations Are: Peas, carrots, potatoes or green beans, fresh tomato, celery or corn, broccoli, cauliflower or brussel sprouts, tomatoes, celery.
